Hello, Good morning everyone!
Today I am going to share another famous dish of Gujarat which is Gujarati Kadhi.
Gujarati kadhi is a very famous dish made from buttermilk and gram flour. It is one of the most important part of Gujarati cuisine. We make it any times in a month. And seriously I am not bored if its taste even it is made everyday.

Ingredients
Buttemilk
2 tbsp Gram flour
2 dry red chillies
Few curry leaves
3 cloves
3 black pepper
2 small pieces of cinnamon
1 tsp Turmeric powder
1 tsp Red chilli powder
1 tsp mustard seeds
1tsp cumin seeds

Preparation
1. Take buttermilk and add 2-3 gram flour in it which will make buttermilk little thick.
2. Heat 2 tbsp of oil, add dry red chillies, cloves, black pepper, cinnamon. Wait of few seconds. Add mustard and cumin seeds, hing, curry leaves. Wait for few more seconds and add butter milk.
3. Let it boil till it becomes more thick.
4. Add coriander leaves for garnishing.

Delicious gujarati kadhi is ready. Enjoy the authentic taste with garam Roti, khichdi, or rice.

                            Dabeli

Hello everyone! Today I am going to share with you all my favourite dish- Dabeli. It is also known as Kutchi Dabeli or Double roti. It is a very famous dish of Gujarat. One can find it in most of the places of Gujarat. It has its origin in Mandvi, a city in kutch region of Gujarat. Even today dabeli masala made in mandvi has the most authentic taste. Thefore dabeli is also known as Kutchi Dabeli. Bhuj and Nakhatrana other towns of kutch which are very close from my village (Nagalpar) are also famous for authentic taste of dabeli apart from Mandvi.

The main ingredient for making dabeli is Dabeli masala. It is available in most of the cities of India. It sold under different brand names. The most preferred masala by people is the masala made in Mandvi and Bhuj because of its taste and ethnicity. We also can find Suhana kutchi dabeli masala or even Badshah dabeli masala, but I would suggest u all to use the masala which is made in Mandvi or kutch to enjoy it's real taste. After using the dabeli masala the remaining masala can be stored in the fridge for upto 6-12 months.

Another important ingredient is chutney. This chutney is made up of dates and tamarind. All we need to do is soak dates and tamarind in warm water for 15-20 minutes, than make paste of it. After that take kadhai, add 2 tbsp oil, add mustard seeds, cumin seeds, hing, curry leaves. After few seconds add the paste and some water. Than add some red chilli powder, coriander powder, cumin powder and salt. And the delicious chutney is ready.


Other ingredients include- bread, boiled potatoes, sev, pomegranate, chopped onions(2-3), peanuts.
Preparation
1. Heat 2 tbsp oil, put dabeli masala. Mash the boiled potatoes. Mix it well. Cook it on a medium flame, keep stirring continuously for 2 minutes.
2. Add chutney in the bread and then put the mixture of boiled potatoes and dabeli masala.
3. Add chopped onions, pomegranates, peanuts and sev
4. Take a pan, add some oil and fry it.

Hello everyone! Hope you all liked my previous blog on Dhokla.
Today I want to share an amazing dish with you guys which is Sev(vermicilli) - Tamatar(tomato) ki sabji known as Sev-tamartar nu shaak in Gujarati.


Sev tamata nu shaak is really a very delicious dish which anyone can prepare at home. It holds the flavour of Gujarati food- salty, spice, sweet and sour. It doesn't take much time to prepare this sabji. Its quite quick and easy to make. All we need is tomatoes which im sure is available in every household and sev which is available in nearby stores. By using this 2 ingredients with some spices we can make an incredibly tasty dish and without incurring much expenses.

Ingredients:(Serves 2-3 people)
2 Tomatoes
2 tbsp oil
1 cup water
Chopped garlic
1 tsp mustards seeds
1 tsp cumin seeds
1/2 tsp hing
Few curry leaves
2 finely chopped green chillies
1/2 tsp turmeric powder
1 tsp red chilli powder
1 tsp ground cumin and coriander powder (dhana-jeeru)
1/2 tsp garam masala
40 gms sev
Salt to taste

Method
1. Cut 2 large tomatoes into big pieces
2. Heat 2 tbsp oil on a low flame. Add mustard seeds, cumin seeds and a pinch of hing than add curry leaves ans chopped green chillies.
3. Add tomatoes. Add salt, tumeric power, red chilli powder, cumin and coriander power, jaggery( if preferred sweet) and some water
4. Let it boil for 5-7 minutes on a medium flame.
5. Add sev
It can be served with garam Roti, chapati, parathas.
Note:It is advisable to add sev right in the end when serving the dish so that is remains crunchy and doesn't become stodgy.

DHOKLA


Dhokla is one of the most favourite dish in all Gujarati Families. Not only Gujarati's but also people across various countries are overwhelmed with its delicious taste.  It is also known as Khaman. There are different types of dhoklas which can be prepared like sandwich dhokla, cheese dhokla etc. It can be taken as a breakfast, side dish, as a snack or even as a main course. It is made fro fermented batter of rice and chickpeas(chana dal). 

Ingredients:  Rice, chickpeas, baking soda, salt(as per taste)  green chillies(4-5)coriander leaves, sugar(2tbsp), lemon(1) , water(1 cup) mustard seed(1tsp), cumin seeds(1tsp), oil(2tbsp)    
                            
Procedure:The procedure of making Dhokla is quite simple. Rice and chickpeas has to be taken in a particular ratio i.e the quantity of chickpeas is should be more than the quantity of rice. This has to be soaked for 4-5 hours. Than this mixture is has to be ground and fermented for 4-5 hours. 
The fermented batter has to be steamed for 20 minutes on a flat dish after adding soda to it and mixing it well. After 20 minutes it has to be cut into pieces. To add more flavours to it,  heat a pan with one tbsp oil Add mustard seed, cumin seeds,curry leaves and green chillies. Thsn add 1 cup of water, 1 lemon, 2 tbsp of sugar. Make it boil for 2-3 mins and than pour it on the pieces of dhoklas. Garnish it with coriander leaves. Add the most delicious dhoklas are ready. It is served with coriander chutney or date-tamarind chutney. 

Benefits: Dhoklas are considered one of the healthiest snack which people of different age groups can have. Also people who are health conscious, can have dhoklas as they are steamed and not fried so it has less oil content and are free from calories. It is also 
helpful in easy digestion. Besides this all the ingredients contain high fibre, proteins and nutrients. So with so many advantages we can have yummy dhoklas instead of oily samosas, vada, and all the fried stuff.
