Hello! Gujarati's are very foody. They just want good and tasty food. Gujarati cuisine is famous for its variety of dishes but a fact you should know is that all dishes prepared under gujarati cuisine are super healthy and at the same tkmetvery delicious. So here I come up with another mouth- watering snack which is a kind of savory cake made with a combinations of rice, various lentils and yogurt and it's named as Handva. In other words, it is a healthy pancake. Don't worry, it's not a missile as Kareena Kapoor says in 3 idiots. It takes little time to prepare but believe me the efforts u put in are worth it. So here are the ingredients and the method to prepare it:


Ingredients:
150 grm yogurt
150 grm bottle gourd(lauki)
1/4 cup split pigeon peas(toor dal)
1/2 cup rice
1 tbsp white lentil (urad dal)
1tbsp yellow split gram 
1/4 cup chana dal 
2 tsp baking soda
2 tsp turmeric powder
3 tbsp vegetable oil
1 tsp mustard seeds
1 tsp cumin seeds
1 tsp lemon
1/2 tsp ginger paste
2 tsp black sesame seeds
Few Curry leaves
2-3 green chillies
Salt as required
Method
1. First thing is to prepare handvo batter. To prepare the batter, wash and soak the rice and other dals in sufficient amount of water for 3-4 hours. After that drain the extra water. Later grind it and make a smooth paste. Once done, add yogurt and salt as per your requirement and grind it once more. Put this paste in a large bowl and keep it aside for 8-10 hours to ferment. Add little water for better consistency.
2. Next, take the handvo batter and add grated bottle gourd, ginger paste, turmeric powder, oil and green chilli paste. Mix all these ingrefiingr well and make sure the batter has thick consistency. (Note: if the batter becomes little watery then you can add sooji. It will increase thickness and also make it crispy.
3. After that, add baking soda and lemon juice and mix it properly.
4. Quickly put a non-stick pan over medium flame and add oil. Once it is heated enough add mustard seeds. Once crackle, add cumin seeds , a pinch of hing and add curry leaves, sesame seeds. Saute it for some time and then add the handvo batter in the pan. Spread it evenly. Cook on both sides till it becomes golden brown.
5. Serve it with green chutney or date-tamarind chutney.
